Chorizo and Corn Salad

INGREDIENTS:
Chorizo
Corn on Cob
Cherry Tomatoes
Red Onion
Cucumber
Carrot
Fresh Parsley
METHOD:
Pan fry Chorizo
Whilst frying, cut the corn off the cob
Add corn to the Chorizo
Cook until the chorizo is cooked and corn is chargrilled
Add to bowl (draining juices)
Add cherry tomatoes, chopped carrot, cucumber, Red Onion and fresh parsley
Mix all together
Serve with meat or eat on its own
