Curried Pineapple Rice

INGREDIENTS:
1 whole pineapple
Rice
Chicken Breast
Garlic
Spring Onion
Tomatoes
Bean Sprouts
Corn or Peas
Egg
Curry Powder
Soy Sauce
Fish Sauce
METHOD:
Cut pineapple in half
Calve out the centre bits, leaving the outer skin
Chop the scooped out pineapple into chunks and set aside
Cook rice and set aside
Cook an omelette, cut up and set aside
pan fry garlic and spring onions
Add chicken and cook through
Add corn / peas and bean sprouts
Add tomatoes
Add rice and continue to fry
Add curry powder, soy sauce and fish sauce to taste
Continue to fry
Add pineapple chunks and fry for a few more minutes
Serve in the pineapple skin
